
Bison Recipe
Tender bison meatballs enriched with Italian seasonings simmer in rich marinara sauce. This approachable preparation works over pasta, in sandwiches, or as appetizers.

Meatball Prep: In large bowl, gently combine all meatball ingredients. Mix just until incorporated - don't overmix.
Forming: Roll mixture into 2-inch meatballs. Place on baking sheet.
Browning: Heat 2 tablespoons oil in large skillet. Brown meatballs in batches on all sides, about 8 minutes total. They don't need to be cooked through. Remove and set aside.
Marinara: In same pan, add onion and cook 5 minutes. Add garlic and cook 1 minute.
Sauce: Add crushed tomatoes, basil, and sugar. Season with salt and pepper. Bring to simmer.
Simmering: Return meatballs to sauce. Cover and simmer gently 45 minutes, stirring occasionally.
Finishing: Adjust seasoning as needed.
