  1. Clarification Mix:

    • Combine ground quail, egg whites, vegetables
    • Mix thoroughly to form "raft"
    • Keep mixture very cold
  2. Cooking Process:

    • Add raft to cold stock, mix well
    • Heat slowly, stirring gently
    • Stop stirring when raft forms on surface
  3. Slow Cooking:

    • Simmer very gently 1.5-2 hours
    • Don't disturb raft once formed
    • Raft will self-clarify the stock
  4. Straining:

    • Strain through cheesecloth-lined sieve
    • Don't press raft (clouds consommé)
    • Season delicately with salt and pepper
