  • 2 oranges (juiced and zested)
  • 2 limes (juiced)
  • 6 cloves garlic, smashed
  • 2 bay leaves
  • 1 tbsp ground cumin
  • 2 tsp oregano
  • 2 tsp salt
  • 1 tsp black pepper

Service Components:

  • Corn tortillas, warmed
  • White onion, diced
  • Fresh cilantro, chopped
  • Lime wedges
  • Salsa verde

Method

  1. Seasoning: Season boar generously with salt and spices
  2. Browning: Brown chunks in Dutch oven with lard
  3. Liquid Addition: Add citrus juices and aromatics
  4. Slow Cooking: 275°F for 3-4 hours until fork-tender
  5. Shredding: Shred meat when cooled slightly
