Stock Preparation: Keep turkey stock warm in separate pot. Essential for proper risotto texture.
Mushroom Cookery: Sauté mushrooms in turkey fat until golden, about 3-4 minutes per side. Season with salt and pepper, reserve.
Risotto Foundation: Sauté onion in butter until translucent. Add rice, stir until edges become translucent. Add wine, stir until absorbed.
Stock Addition Process: Add warm stock one ladle at a time. Stir constantly, wait for absorption before adding more. Continue 18-20 minutes until rice is al dente.
Final Assembly: Fold in turkey, mushrooms, cheese, sage. Adjust consistency with additional stock. Season with salt and pepper.
