  1. Bone Roasting: Roast bones at 425°F for 45 minutes. Add vegetables, roast 20 minutes more. Bones should be deep golden brown.

  2. Pot Assembly: Transfer everything to large stock pot. Deglaze roasting pan with water, scrape up bits. Add to pot with seasonings.

  3. Water Addition: Cover bones by 2 inches with cold water. Bring to gentle simmer, never boil for 2-3 minutes. Skim foam regularly first hour.

  4. Long Simmer: Simmer 6-8 hours, skimming as needed. Add water as needed to maintain level. Strain through fine-mesh strainer.
