Butterflied turkey breast is filled with cranberry-walnut stuffing, rolled tight, and wrapped in bacon for an elegant presentation. This restaurant-quality technique ensures even cooking while the stuffing adds moisture and flavor to the lean meat, creating stunning sliced presentation.
Breast Preparation: Butterfly breast by cutting horizontally, leaving 1/2" connected. Pound to even 3/4" thickness. Season with salt and pepper.
Stuffing Assembly: Combine breadcrumbs, cranberries, walnuts, onion, sage. Bind with beaten egg and stock. Let mixture cool completely, about 20-30 minutes.
Rolling Technique: Spread stuffing evenly over butterflied breast. Roll tightly from long side. Wrap with prosciutto strips. Tie with twine at 2" intervals.
