
Wild Turkey Recipe
Ground wild turkey creates a leaner version of classic chili with deep, complex flavors from toasted spices and long simmering. The addition of dark chocolate and chipotle powder adds sophisticated depth while maintaining the hearty comfort food appeal.
Turkey Browning: Brown ground turkey in batches in large pot. Don't overcrowd - proper browning essential. Remove turkey, reserve rendered fat.
Aromatic Base: Sauté onions in rendered fat until soft. Add garlic and jalapeños, cook 2 minutes. Add spice blend, toast until fragrant.
Building the Chili: Add tomato paste, cook 2 minutes. Return turkey to pot. Add tomatoes, stock, vinegar. Bring to simmer.
Long Cooking: Simmer partially covered 2-3 hours. Stir occasionally, add liquid if needed. Add beans (if using) last 30 minutes. Stir in chocolate last 15 minutes.
