Pounded turkey cutlets are quickly sautéed and finished with white wine, lemon, and capers for a bright, elegant dish. The pounding technique tenderizes the lean meat while the classic Italian sauce adds sophisticated flavors in just minutes.
Turkey Preparation: Pound cutlets to 1/8" thickness between plastic wrap. Season with salt and pepper. Dredge lightly in flour.
Cooking Process: Heat butter and oil in large skillet. Cook cutlets 2-3 minutes per side. Work in batches, don't overcrowd. Remove cutlets, keep warm.
Sauce Development: Add wine to pan, scraping up browned bits. Add lemon juice and capers. Reduce sauce slightly. Return cutlets to warm through.
Finishing: Garnish with fresh parsley. Serve immediately.
